Brewing Advice

We recommend using bottled, filtered or freshly drawn water; avoid boiling water over and over in the kettle as it becomes lifeless and the oxygen in water helps to draw out the flavours. We use a Cuisinart Mult-Temp Jug Kettle which allows you to control temperature to 85*C, 90*c, 95*C and 100*C – It is a bit of a treat but we love it.

We use approximately 3 grams of tea per 200ml of water.

Broken and whole leaf black teas can be infused at 100*C for 3 to 5 minutes. Though we suggest that delicate black teas, like our Darjeeling and Kanoka Assam, are best infused at 90*C to 95*C for 3 to 5 minutes.

Oolong teas should be infused at 85*C to 95*C for 3 to 4 minutes.

Green and White teas should be infused around 80*C for 3 to 5 minutes.

Further infusions can be enjoyed with oolong, green, white as well as the Darjeeling leaves.
